Ingredients:

– 7 ounces of cooked shrimp
– 1 cup of tomatoes, sliced
– 1/4 cup of lemongrass, chopped
– 1/2 cup of red onion, sliced
– 1/4 cup of bell peppers, sliced
– 3 scallions, sliced
– 1 cucumber, sliced
– Spring mix, as much as desired
– 2 spicy chili peppers, sliced
– Juice of 1 lemon
– Fresh parsley, chopped
– Fresh cilantro, chopped
– Salt and pepper to taste

Preparation:


1. Mix all the ingredients in a bowl and stir well.
2. Add as much lemon or spicy chili peppers as you’d like!
