Ingredients:

– 1 cup of spinach
– 1/2 cup of red bell peppers
– 1/4 cup of lemongrass
– 1/4 cup of cauliflower rice
– 3 large eggs
– 2 ounces of anchovies or tuna (or cooked meat of choice, including lean deli meats)
– 1 tsp. of soy sauce
– 1/4 cup of water
– Black pepper to taste
– Other spices and herbs optional

Preparation:


1. Chop spinach and red bell peppers.
2. In a medium bowl, beat eggs first and then add the rest of the ingredients. 
3. Cover with plastic foil and microwave on high for 3-4 minutes
4. Let it cool off for a bit before eating.
5. Enjoy!
